Spiced Moroccan Tomato & Red Lentil Soup
This is a super easy but delicious soup recipe, perfect for a cold winters day.
You don’t have to soak the lentils over night if you forget, you could just rinse them thoroughly and soak for 10 minutes in boiling water.
This soup is freezer friendly too.
Ingredients
1 brown onion
2 tablespoons olive oil
1 teaspoon:
- Ground ginger
- Ground coriander
- Ground cumin
- Paprika
1/2 teaspoon:
- Black pepper
- Cinnamon
- Tumeric
1/4 teaspoon:
- Chilli powder/cayenne pepper
- Nutmeg
750 mls vegetable stock
100g red lentils (rinsed and soaked over night)
2 x 400g tins crushed tomatoes (organic if possible)
Salt and pepper to taste
Natural yoghurt (optional)
Coriander to serve
Method
Heat the olive oil in a pot and sautee the onion.
After 5 minutes , add all the spices to the pot to release the flavours.
After 1-2 minutes, add the stock, lentils and tomatoes and simmer for 15-20 minutes, until the lentils are soft.
Season with salt and pepper and garnish with fresh coriander and a dollop of natural yoghurt.
Serve with fresh bread if you like.
