Healthy Mango Salsa Recipe
This healthy summer salsa recipe is easy, fresh and super tasty! It can be used on its own or along side another meal so get creative and add some salsa to your summer menu.
We enjoyed this with fish taco’s which we made with fresh tortillas, sour cream and guacamole. YUM! I highly recommend trying this combo before summer is up.
1 red onion
1 red capsicum
3 roma tomatos
1 handful coriander
1 handful mint
Juice of 2-3 limes
Salt and pepper
Splash of apple cider vinegar
Chop everything up to your preferred size.
Add seasoning (salt, pepper, apple cider vinegar, lime juice and herbs) to taste.
There are no hard and fast rules with this one. The key is to keep tasting it to see what you need more of and to keep the flavours balanced. I also add a little touch of olive oil, just to keep it nice and fresh.
